Fiesta Bean Soup

1.  Place the following in large pot and stir until dissolved.

    1 package Hidden Valley Ranch dressing mix

    1/2 package taco seasoning mix        2 1/2 cups water

2.  Drain and rinse (this removes some of the sodium):

    1 can black beans         1 can pinto beans

    1 can kidney beans       1 can yellow or shoe peg corn

3.  Add (undrained):

    1 can Rotel tomatoes

    1 can diced tomatoes

4. Add 1 lb cooked ground beef

 Bring to a boil, reduce heat, cover, and simmer for 20 minutes. 

Makes 11 cups. 

Place in a Crockpot if desired instead of simmering. 

I would think that 1-2 hours would be enough time. 

I would stir a couple of times during heating.  Add more water if you want a thinner soup.

   If desired, add shredded low fat cheese on top.
